‘Flavor Is Our Differentiator’: Buzzard’s Roost Launches Inaugural Bottled-In-Bond Bourbon

On Tuesday, the Louisville, Kentucky-based Buzzard’s Roost Whiskey commemorated its fifth anniversary with the launch of its inaugural Bottled In Bond bourbon.

Boasting a mash bill of 51% corn, 45% wheat and 4% malted barley, the expression is the latest in a fast-expanding portfolio that’s recently grown to include a Cigar Rye, American Whiskey and Toasted American Oak Bourbon.

Similar to other releases in the brand’s catalog, the new bottling has a double-barreled trick up its sleeve. Buzzard’s Roost BIB was distilled by MGP in Lawrenceburg, Indiana, in the fall of 2018, where it was aged for five years in a federally bonded warehouse. After that, it underwent a secondary maturation at Bardstown Bourbon Company before being bottling in early 2024.

“We are all about respecting tradition while adding our own twist–and the secondary aging on this bourbon transformed it into something truly special,” co-founder and master blender Jason Brauner remarked in a news release.

Bottled In Bond whiskey dates its roots back to an eponymous law passed in 1897. Designed as a rebuttal to the proliferation of low-quality booze, the act attached tax incentives to a set of distillation guidelines that guaranteed greater transparency. The parameters for a BIB whiskey are the same today as they were in the 19th century; the spirit must be aged for at least four years in a federally bonded warehouse, bottled at exactly 100 proof and made by a single distiller at a single distillery.

These days, the designation acts more as a nod to history than a strict code of ethics. Alongside a growing catalog of BIB releases from Still Austin, New Riff and Milam & Greene, Buzzard’s Roost joins brands in bringing the concept to modern drinkers.

Nose: “Starts with vanilla and light brown sugar, followed by honey, butterscotch, orange and a hint of baking spice”

Palate: “Tastes like rich vanilla custard with caramel bits and an orange glaze. Mid-sip, you’ll find cinnamon and nutmeg, adding a smooth warmth”

Finish: “Fruits and spices glide over the tongue, then gently fade to a hint of light oak and lasting vanilla caramel”
