
“Bill and Lyn Lark are true pioneers of craft spirits in Australia and among the first people we spoke to about our gin dreams, so it is such an honor to team up and create something that blends our worlds together,” Four Pillars co-founder and distiller Cameron Mackenzie said. “It’s an exceptional gin finished in exceptional barrels and I can’t wait to get it out there, and share it with our friends here in Australia and overseas too.”The new expression has been limited to just 2,000 bottles retailing at AUD $175 (USD $114) each. Mackenzie says he's already begun collecting whisky barrels for further iterations in the series.

Though aged gin is still relegated to niche status in the eyes of many consumers, Four Pillars has taken the concept in stride. In addition to its flagship sherry- and chardonnay-finished gins, the distiller is currently selling a limited-edition Shiraz Gin aged in dry red barrels from the Yarra Valley winery. Other expressions in the distiller's inventive lineup include a Peach Gin and a Sticky Carpet Gin distilled with hops.
