San Antonio-based Maverick Distilling has unveiled its latest take on Bottled-in-Bond whiskey by way of an unusual, accidentally purchased batch of triticale grain.

Distilled in 2019 before aging four years in new American oak barrels, Samuel Maverick Straight Triticale Whiskey Bottled in Bond follows in the steps of last year’s Straight Triticale bottling unveiled in 2023. Sold at 100-proof and brimming with smoke- and yeast-forward flavor, it’s the latest expression from a distiller frequently eager to think outside the box.

Brand owner Sam Maverick describes it as the result of a “happy accident.”

“We ordered several thousand pounds of rye grain to produce our Rye Whiskey,” Mavericks said. “Through a mix-up at the silos, the grain we received labeled as rye turned out to be triticale. In true Maverick fashion, we decided that when life gives you triticale, make fine Texas Whiskey.”

Triticale, a hybrid between wheat and rye, was first invented in 1873 by Scottish botanist A.S. Wilson. While rye whiskey typically features a dry and spicy palate, triticale whiskey dives headfirst into sweetened notes of vanilla, tree nuts and cherry. The grain is primarily grown in China, Poland and Germany, contributing to its relatively niche status within the American spirits industry.

When we tried Maverick’s first take on triticale whiskey last year, we were impressed by its one-of-a-kind palate brimming with distinctive yeast and baking spice. Bottle Raiders Editor in Chief David Morrow wrote:

“It’s remarkably distinctive — I’ve never tasted anything quite like it. That makes sense, as this is my first taste of a triticale whiskey. It’s very wheaty with some subtle rye-like spice. The longer it sits, the more sweetness comes through. There’s plenty of honey, but it’s still not an overly sweet whiskey overall. There’s reasonable complexity at work, but the dominant profile is bread, toast, butter and honey.”

Maverick Distilling says its latest expression balances flavors of butterscotch, orange zest, nutty pecan pralines and West Texas pinion smoke. This is very much a “while supplies last” kind of whiskey; last year’s Straight Triticale release was limited to just 66 bottles. Though the distillery hasn’t disclosed how many bottles of its latest batch are available, they can be picked up for $135 on the brand’s website.
