Its recently unveiled Devils vs. Angels-themed release — which promises a tequila cristalino and añejo respectively — incorporates its divine inspirations directly into the production process.
The red-tinted decanter, known as El Diablo's Elixir, is a single-barrel añejo cristalino aged six months in American white oak, six months in French oak then another six months in American oak. In keeping with the theme, the brand has dubbed it the "6-6-6" aging method. The liquid is then charcoal-filtered for clarity, a technique popular within the increasingly trendy cristalino category.
The final product is said to balance flavors of agave, sweet caramel, toasted oak and a peppery finish.
The Spirit of an Angel — boasting a navy-blue decanter and white accents — dials up the respective barrel times to nine months each, resulting in a reimagined "9-9-9" aging process. Unlike El Diablo's Elixir, the expression is not charcoal-filtered, in theory allowing for a greater oak presence on the palate. Cayéya says to expect flavors of caramelized agave, dark chocolate and lingering espresso (no mention of communion wine or sacramental bread).
Both editions have been limited to just 1,200 bottles, available now at $150 each.
“This is the reason we began developing Cayéya nearly five years ago - to have fun and to bring unique single barrel offerings to the category,” Sam Hirsch, founder of Tequila Cayéya and Piermont Brands said in a news release. “Whether it’s through the liquid or the packaging, we will always strive to push the envelope with our master distiller Zandra and give fans of the brand something special."
Overseen by master distiller Zandra Gomez, Tequila Cayéya is produced at Destiladora de Agave Azul (NOM 1424) in Los Valles, Jalisco. The brand was brought to market in 2020 and produces a flagship Blanco, Blended Reposado, Single Barrel Reposado and Single Barrel Añejo, all of which are reportedly crafted with a small-batch additive-free ethos.
